About Our Milk
Our milk comes from Procal Dairies, one of the few remaining Australian owned dairies in Australia. The business was started in 2003 by Nick Thyssen, who had previously started Patra in the 1960’s before commencing The Original Juice Co. in 1989. All of the milk comes direct from farm and is sourced from select dairy farms in northern Victoria and southern NSW. Procal is the fastest growing milk brand in the café market and is now available to corporate offices through its alliance with The Milk Box. In April 2009 Procal opened a new 3 hectare factory in Coolaroo, using the latest technology available to the dairy industry. The plant is capable of processing 60 million litres of fresh milk per year.
NO Permeate
Permeate is a waste product of dairy production created by removing all the fat and then concentrating the material that is left. Permeate can make up to 12% of some milk brands in supermarkets, creating a watery taste. Premium Quality
Procal Dairies uses milk from selected farms that have a proven record for providing milk low in Lipases. Lipase is an enzyme that when heated breaks down the natural fat in milk and can be the cause of many barista’s frustration, as they seek to produce the perfect Cappuccino or Latte.
Quality Control Standards
Procal Dairies processing plant was commissioned in 2009 and is the most modern milk processing operation in Australia. It complies with the latest Australian standards for dairy processing facilities. Procal is licensed by Dairy Safety Victoria to submit all products for external testing by independent bodies, including the Dairy Technical Services (DTS).
